A lot of first time Baby-Led Weaning parents ask about first foods and breakfast ideas. The best advise I can think to give is to not over-think it. What do you normally have for brekkie? What’s your fave thing to eat? What are you craving at the moment? What’s your go-to flavour combo’s?
When you answer these questions, you will have meal ideas a-plenty! I’ll tell you what my favourite meal is…..BREAKFAST! Love it! Everything about it. Nothing is off limits at breakfast…sweet….savoury or better yet, sweet and savory! One of our fave breakfast go-to’s is my BOURKE-cher Muesli (did you see what I did there?) My son LOVES it and so do I as it takes me minutes to prep the night before and then it’s ready to serve upon waking.
(Makes 2.5 large bowls …. approx 8 serves)
5 cups Whole Rolled Oats
1/2 cup Dried Apple (Roughly Chopped)
1/2 cup Medjool Dates (Roughly Chopped)
1/3 cup Chia Seeds
1/2 cup Almond Flakes
1/2 cup Sultanas
1/4 cup Dried Cranberries
Pre-Mix together all of the ingredients in a large pot or mixing bowl until well combined. Transfer into an airtight container for the pantry. Store until needed.
When ready to use;
Add 2 cups of your muesli mix to a mixing bowl.
Add 1 cup of Almond milk (or milk drink of your choice. You can also do 1/2 cup tinned coconut milk and 1/2 cup almond milk for a creamier version)
Add 1/2 cup of coconut yoghurt.
Mix together until well combined. Scrape down the sides of the bowl so all the Chia seeds are in the mix. Cover with plastic and refrigerate overnight.
Serve with your choice of fresh fruit and berries. Top with milk if desired.
Easy as that….The quickest and yummiest brekkie for busy households.
